FATA MORGANA - Sweet wine
Tasting Sheet
- Vineyards with a chalky character and low fertility, where low productivity has been sought. A raisin-making process is carried out on the same vine, in which health is controlled by eliminating suspicious bunches, improving ventilation of the rest. Manual harvesting is delayed until at least November.
- Preparation : light maceration and selective pressing. Slow fermentation, until it stops due to excess alcohol.
- Aging : up to two years in 1,500-litre French oak foudres.
- Tasting : Intense garnet colour, closed and without transparency. Thick. On the nose it is intense, sweet, floral and with certain ketonic notes. On the palate it is full-bodied, oily and with a soft sweet flavour. Certain tannic sensations, good passage and length.
- Consumption : it is recommended to consume it at a medium-low temperature of 7-12ºC. Due to its sweet sensations and at the same time powerful structure, it is a good complement to fatty foods in appetizers, patés, cheeses, etc. and also with desserts based on cheese boards and chocolates. It is a temptation for snacks with pastries.
