Tasting Sheet
- Vineyards with a sandy loam character in which we have sought to enhance the balance between the fruit and the structure by controlling sunlight, irrigation and the amount of harvest at the ripening time.
- Preparation : long traditional maceration by pumping over with removal of seeds and contained temperature to extract maximum colour and structure with sufficient gentleness to withstand ageing.
- Ageing : up to 12 months in 2nd and 3rd year French and American oak barrels. The different varieties are aged separately and blended prior to bottling.
- Tasting notes : Ripe cherry red colour with garnet edges and violet hues. High intensity on the nose. Ripe black fruits, almost stewed, together with fresh notes reminiscent of liquorice. Toast, caramel and coffee with milk complete the definition of a very complex wine. The palate is fresh at first, filling later, as it has volume. It has a grainy sensation and sweet touches. At the end, in the retronasal, the toast and caramel return to make it long and memorable.
- Consumption : recommended at medium temperature (16 - 17º C). A splendid wine for everyday use. For traditional stews based on legumes and charcuterie.
